Cincau or grass jelly is a jelly like dessert that comes in green and black varieties, cincau hijau (green grass jelly) and cincau hitam (black grass jelly). Traditional ones are sold in clear plastic bag secured with rubber bands. But nowadays, you can also find them sold in sealed square plastic box like silken tofu, or in sealed plastic tube like egg tofu. Cincau by itself has a slight bitter taste, so we love cutting these into small cubes and add them to our sweet drinks, sweet tea, and our various ice desserts.
The lemongrass tea by itself is great, so don’t worry too much if you cannot find the grass jelly. But having something to munch while drinking tea is pretty luxurious, don’t you think? ♥
- 1 package of black grass jelly (Indonesian: cincau hitam), cut into small cubes
- 1½ liter water
- 1 tablespoon black tea leaves (Indonesian: daun teh)
- 5 lemongrass (Indonesian: sereh), bruised and knotted
- 100 gram sugar
- Make the tea by boiling together water, tea leaves, lemongrass, and sugar. Simmer for 15 minutes to allow the tea and lemongrass enough time to infuse. Turn off heat and strain into pitcher or serving glasses.
- Add 2 to 3 tablespoons of black grass jelly cubes into each glass prior to serving.
