Codonopsis, Shiitake, and Red Dates Chicken

Ingredients

  • 2 tablespoon oil
  • 4 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 chicken, cut into 8 pieces (or use 8 drumsticks)
  • 8 dried shiitake, soak in water to rehydrate until soft, remove stems
  • 25 gram codonopsis, cut into 2" sections
  • 25 gram red dates
  • 3 cups water
  • 2 tablespoon sugar
  • 1/4 cup light soy sauce
  • 2 tablespoon dark soy sauce
  • corn starch slurry (2 tablespoon corn starch + 2 tablespoon water)

Instructions

  1. Heat oil in a skillet over medium high heat and sauté garlic and ginger until fragrant (about 2 minutes), then add chicken and cook until no longer pink.
  2. Add shiitake, codonopsis and red dates, mix well. Then add water, sugar, soy sauce, and dark soy sauce. Continue cooking until it reaches boiling point, then reduce heat to a simmer, cover the skillet, and cook for about 90 minutes to 2 hour until the meat falls off the bones.
  3. Remove the cover and return to a boil, thicken the sauce by adding corn starch slurry and stir continuously for about 2-3 minutes.
  4. Turn off the heat and serve immediately with steamed white rice.
