Ingredients

  • 3 ripe banana, mashed (slightly more than 1 cup mashed banana)
  • 1 stick (8 tablespoon) unsalted butter, melted
  • 125 gram brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup all purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt (skip if using salted butter)
  • 150 gram dark chocolate, chop into chunks

Instructions

  1. Preheat oven to 175 Celsius (350 Fahrenheit). Grease a 9"x5" loaf pan, set aside.
  2. In a mixing bowl, stir together mashed banana, melted butter, brown sugar, egg, and vanilla extract.
  3. Sift all purpose flour, cocoa powder, baking soda, and salt into the mixing bowl. Stir until the wet ingredients and the dry ingredients is just combined.
  4. Add dark chocolate chunks, stir to distribute evenly, then pour into prepared loaf pan.
  5. Bake for about 1 hour, or until a cake tester comes out clean.
  6. Let the cake rest in the pan for 15 minutes, then run a knife along the pan edges to loosen the cake, invert it onto a wire rack to cool completely. Serve warm or at room temperature.
