Enoki and Shirataki Stir Fry

Ingredients

  • 1 packet enoki (7 oz / 200 gram)
  • 1 pack of shirataki (14 oz / 400 gram)
  • 2 teaspoon oil
  • 3 tablespoon soy sauce
  • 1 teaspoon dashi stock granules (*)
  • 2 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 tablespoon sesame oil
  • 2 scallions, thinly sliced

Instructions

  1. Chop off and discard 1 inch of the enoki root. Cut the enoki bunch into two halves lengthwise. Wash and drain.
  2. Rub 1 teaspoon of salt with shirataki for 1 minute. Wash and drain. Then cut into bite size length.
  3. Place shirataki in a frying pan over medium high heat. Cook until slightly dry, then add enoki and oil and mix well.
  4. Season with soy sauce, dashi stock granules, sugar, and salt. Bring to a boil, and once the sauce is slightly reduced, turn off the heat. Add sesame oil and mix well.
  5. Transfer to a serving plate and garnish with thinly sliced scallions.

Notes

  • (*) Substitute with mushroom stock granules for vegetarian option.
