Orak Arik Tahu Jamur - Tofu, Mushroom, and Egg Stir-Fry
Ingredients
- Egg scramble
- 4 eggs
- 1/2 teaspoon salt
- 1/2 teaspoon ground white pepper
- Fried tofu cubes
- 1 block firm tofu (about 450 gram/1 lb), cut into cubes
- 3 cloves garlic, minced
- 1/2 teaspoon salt
- 1/2 cup water
- The rest of the ingredients
- 50 gram shallot, thinly sliced
- 1/2 large onion, diced
- 3 cloves garlic, minced
- 2 scallions, separate whites and greens, thinly sliced
- 3 red fresno chilies (or 1 red bell pepper), seeded and diced
- 250 gram (8 oz) fresh mushroom (any variety), cut into bite sizes
- 1 tablespoon oyster sauce
- 1 tablespoon sweet soy sauce (Indonesian: kecap manis)
- 1 tablespoon fish sauce
- 1 teaspoon ground white pepper
Instructions
- Marinate tofu: Marinate tofu cubes with garlic, salt, and water in a mixing bowl for 10-15 minutes.
- Fry tofu: Heat 2 tablespoon oil in a non-stick frying pan on medium heat. Fry tofu cubes until golden brown, set aside.
- Beat eggs: In a mixing bowl, lightly beat together eggs with salt and ground white pepper. Set aside.
- Fry aromatics: Add 2 tablespoon oil to the frying pan. Stir fry shallot, onion, garlic, the white part of scallions, and Fresno chilies/bell pepper until fragrant, about 2 minutes.
- Fry mushroom: Add mushroom, stir to mix, and cook until the mushroom wilt.
- Make egg scramble: Push everything to one side of the pan. Pour beaten eggs to the clean side of the pan. When the eggs start to set, stir with a spatula to make scrambled eggs.
- Add tofu and seasoning: Return fried tofu cubes to the pan. Season with oyster sauce, sweet soy sauce, fish sauce, and ground white pepper. Mix well. Adjust seasoning as needed.
- Serve: Turn off heat. Transfer to a serving plate, and garnish with the green part of scallions.
