Sambal Goreng Ikan - Fish in Spicy Chili Sauce

Ingredients

  • 1 tablespoon oil
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 2 tomatoes, cut into wedges
  • 3/4 cup sambal goreng (recipe)
  • 4 tablespoon tomato ketchup
  • 1 tablespoon soy sauce
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 500 gram firm white fish (I am using rock fish this time), cut into bite sizes (*)
  • 2 scallions, sliced diagonally

Instructions

  1. Heat oil in a wok/frying pan on medium high, sauté onions until slightly translucent.
  2. Add red bell pepper and tomatoes, cook until tomatoes look slightly wilted.
  3. Add sambal goreng, tomato ketchup, soy sauce, salt, and sugar. Mix well. Cook until the sauce bubbles.
  4. Add fish, mix well. Cook for 2 minutes, or until the fish is cooked. Adjust salt and sugar as needed.
  5. Turn off heat. Add in the scallions, mix well. Transfer to a serving plate, serve with steamed white rice.

Notes

  • (*) You can also use shrimps, squids, crabs, or any combination of your favorite seafood.
