Teh Sereh dan Cincau - Lemongrass Tea with Grass Jelly

  • 1 package of black grass jelly (Indonesian: cincau hitam), cut into small cubes
  • 1 1/2 liter water
  • 1 tablespoon black tea leaves (Indonesian: daun teh)
  • 5 lemongrass (Indonesian: sereh), bruised and knotted
  • 100 gram sugar


  1. Make the tea by boiling together water, tea leaves, lemongrass, and sugar. Simmer for 15 minutes to allow the tea and lemongrass enough time to infuse. Turn off heat and strain into pitcher or serving glasses.
  2. Add 2 to 3 tablespoons of black grass jelly cubes into each glass prior to serving.
