Tofu and Ground Pork in Black Bean Sauce
Ingredients
- 150 gram ground pork (*)
- 2 tablespoon oil
- 5 cloves garlic, minced
- 3 red chilies (Indonesian: cabe merah keriting), cut into thin diagonal slices
- 1 teaspoon salted yellow bean (Indonesian: tauco)
- 1 tablespoon black bean sauce
- 1 teaspoon soy sauce
- 1 teaspoon sugar
- 1 teaspoon sesame oil
- 1 cup water
- 300 gram firm white tofu, cut into small cubes
- 1 scallion, cut into 1 cm slices
- 1/2 tablespoon corn starch + 1 tablespoon water
- Marinating sauce
- 1 teaspoon soy sauce
- 1 teaspoon corn starch
- 1 teaspoon sesame oil
- 1/2 teaspoon sugar
- 1/4 teaspoon ground white pepper
Instructions
- In a mixing bowl, combine ground pork and the marinating sauce. Mix well and set aside to rest for 10 minutes.
- Heat oil in a wok on high heat. Sauté garlic, chilies, salted yellow bean, and black bean sauce until fragrant, about 3 minutes.
- Add the ground pork and cook while stirring (to prevent clumps) until the meat is no longer pink.
- Season with soy sauce, sugar, sesame oil, and pour the water into the wok. Bring to a boil.
- Add the tofu cubes and return to a boil. Reduce heat and simmer for 3 minutes.
- Toss in the scallion slices. Mix well. Pour the corn starch solution to thicken the sauce. Turn off heat and serve immediately.
Notes
- (*)Ground pork can be substituted with ground chicken, ground beef, or bite size fillets of white fish.
