Es Campur - Mixed Shaved Ice Dessert

If I have to choose one dessert as our national dessert, then I would have to pick es campur. This humble dessert is everywhere, from push cart hawkers to small eateries to fancy restaurants and even five star hotels. You are basically paying for the same thing no matter where you get your es campur from, with the main differentiation being the venue, rather than the food, but you do have a bit of guarantee in cleanliness from a restaurant then the one sold in the streets. But the ultimate peace of mind can only be had from the one made in the comfort of your own home, you know exactly what you are getting since you are the one preparing, right? ♥

As far as ingredients go, as long as you have shaved iced, coco pandan syrup, and sweet condensed milk, everything else is really up to interpretation. Some of the more common ingredients are: nata de coco, kelapa muda (young coconut flesh), cincau (grass jelly), tape (fermented cassava), nangka (jackfruit), alpukat (avocado), biji selasih (basil seeds), kolang kaling (arenga palm fruit), and cendol. If the ingredients are hard to find in where you live, feel free to substitute with canned fruits, or other fresh fruits.

An es campur is never stirred beforehand. So, if you order one, this next photo is closer to what you are going to get. All the goodies will be buried beneath the shaved ice, with drizzle of sweet condensed milk and coco pandan syrup on top of the ice. When it arrives, you will probably wonder how to make sure this thing doesn’t just fall off since the shaved ice is gonna be an inch above the rim of the serving glass/bowl. Fear not, just slowly push down the shaved ice with a spoon, then stir ever so slowly until everything is properly mixed up. Enjoy! ♥

Ingredients

  • 2 tablespoon grass jelly cubes (Indonesian: cincau)
  • 2 tablespoon nata de coco
  • 2 tablespoon basil seeds (Indonesian: biji selasih) that has been soaked in hot water
  • 2 tablespoon avocado cubes (Indonesian: alpukat)
  • 2 tablespoon fermented cassava cubes (Indonesian: tape)
  • 1/2 cup shaved ice (Indonesian: es serut)
  • 2 tablespoon sweet condensed milk (Indonesian: susu kental manis)
  • 2 tablespoon coco pandan syrup

Instructions

  1. In a serving glass or serving bowl, add glass jelly, nata de coco, basil seeds, avocado, and fermented cassava.
  2. Top with shaved iced, and drizzle with sweet condensed milk and coco pandan syrup.
  3. Just prior to eating, stir everything together with a spoon.

    I love campur a lot and Iike to order it whenever I can! It's like a combination of some of favorite tropic dessert ingredients. I wish it's easier for me to find some of the ingredients here in NYC though. Thanks for the mouth-watering recipe!

    This is perfect for hot weather like this. I think I've not tried this when I was holidaying in Bali. How did you shave the ice? I'm enjoying browsing your blog for recipes to cook for AFF Indonesia :)

      Hi Shannon, I use my blender to shave ice. I don't know how common this is, but in Indonesia, almost every blender has a special button to shave ice :)
