Honeydew and Coconut Water Juice
I read a pretty intriguing drink recipe from this serious eats article where it calls for combination of honeydew and coconut water. Lucky for me, honeydew is pretty much a year round thing in Indonesia, so is lime and coconut water. You can buy fresh coconut and get the water from that. But being lazy me, I bought packaged coconut water like the one in photo, less messy and seems to be always available in any grocery store. I did decide to veer a bit off from the reference recipe, skipping the syrup making part and the chili and the sugar. Instead, I used only honeydew flesh, coconut water, lime, and honey. Putting all these in a blender and less than 2 minutes later, voilà, the juice is done. My verdict, tastes pretty close to a really classic Chinese dessert honeydew sweet soup, but in juice form. Unlike the soup, this juice is less creamy since we are using coconut water instead of coconut milk and fresher due to the addition of lime juice. Good stuff all in all. ♥
