Indonesian kopi lethok is a coffee drink made from coffee, coconut milk, and sugar. Super easy and delicious, and perfect for vegan coffee drinkers!
Coffee, check. Coconut milk, check. Sugar, check. These three ingredients combined make kopi lethok. This coffee drink originates from Ngawi, a city in East Java. And though not exactly the original purpose of the drink, this coffee and coconut milk combo is the perfect drink for coffee drinkers who are vegan and is looking for a dairy-free alternative to their milk/cream. ♥
How different is kopi lethok to bajigur?
Sadly, the simpler kopi lethok is not as famous as bajigur, another Indonesian coffee drink, which is super popular compared to kopi lethok. Interestingly, bajigur is pretty much a build-up from kopi lethok. You start with the same ingredients as kopi lethok, then you add ginger, pandan leaves, cinnamon, and palm sugar, and tadaa…, it becomes bajigur!
For most people, I would bet that brewing a cup of kopi lethok will be a fast and simple affair compared to scrounging up all the ingredients for a bajigur. But for those interested, I will definitely feature a bajigur recipe in a future post, so stay tuned :) In the meantime, I am writing this while sipping a cup of freshly brewed kopi lethok and savoring the cloudy Jakarta sky. ♥
Kopi Lethok - Coffee and Coconut Milk
- 500 ml coconut milk
- 1 tablespoon ground coffee
- 1 tablespoon sugar
- Place all ingredients in a pot and bring to a boil.
- Once all the sugar has dissolved, turn off heat and transfer to 2 serving glasses. Serve immediately.
