Orak Arik Tahu Jamur - Tofu, Mushroom, and Egg Stir Fry

Orak arik is a simple everyday dish consists mainly of scrambled egg with vegetables, tofu, mushroom, and even meat if you so wish, though the most common ones are usually just vegetables. If you want a quick dish to finish your carrot or odd stalk of celery, this is going to be the perfect dish to make as long as you have some eggs and vegetables to go along with it.

Orak Arik Tahu Jamur - Tofu, Mushroom, and Egg Stir Fry

  • 4 eggs
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground white pepper
  • 1 block firm tofu (about 400 gram), cut into cubes
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 cup water
  • 50 gram shallot, thinly sliced
  • 1/2 onion, diced
  • 3 cloves garlic, minced
  • 3 red fresno chilies, seeded and diced
  • 1 packet king trumpet mushroom (about 250 gram), cut into bite sizes (*)
  • 1 tablespoon oyster sauce
  • 1 tablespoon sweet soy sauce (Indonesian: kecap manis)
  • 1 tablespoon fish sauce
  • 1 teaspoon ground white pepper
  • 2 scallions, thinly sliced


  1. In a mixing bowl, lightly beat together eggs with salt and ground white pepper. Set aside.
  2. Marinate tofu cubes with garlic, salt, and water in a mixing bowl for 10-15 minutes.
  3. Heat 2 tablespoon oil in a non-stick frying pan on medium heat. Fry tofu cubes until golden brown, set aside.
  4. Add another 2 tablespoon oil to the frying pan. Stir fry shallot, onion, garlic, fresno chilies until fragrant, about 2 minutes.
  5. Add mushroom, mix well. Cook until mushroom starts to wilt. Push everything to one side of the pan.
  6. Pour beaten eggs to clean side of the pan, when the eggs start to set, start stirring with spatula to make scrambled egg.
  7. Return fried tofu cubes to the pan. Season with oyster sauce, sweet soy sauce, fish sauce, and ground white pepper. Mix well. Adjust seasoning as needed.
  8. Turn off heat. Transfer to serving plate, and garnish with sliced scallions.


  • (*) You can use other mushrooms such as shimeji, fresh shiitake, or even white button mushrooms.
