Steamed Egg Tofu with Dried Shrimp Sprinkle
Soft and silky steamed egg tofu topped with spicy and savory sautéed dried shrimp sprinkle is the perfect way to enjoy egg tofu. I make this dish often since the combination is just so delicious.
Egg tofu is one of my favorite ingredient for preparing quick dishes. It is a type of tofu made from a mixture of soy milk and eggs, so please be aware if you are allergic to eggs.
The texture of egg tofu is similar to silken tofu, with a savory eggy taste. If you are new to tofu, egg tofu may be a gentler ease into the world of tofu dishes.
The dried shrimp sprinkle is perfect with the steamed egg tofu, but it is so delicious you will want to use it with anything you can think of.
Ingredients for Steamed Egg Tofu with Dried Shrimp Sprinkle
- egg tofu
- dried shrimps
- soy sauce
- oil
- garlic
- red chili
- scallion
- sugar
- white pepper
Egg Tofu
You can find egg tofu in most Asian grocery stores in the tofu section. They come in plastic tubes and weigh around 125 grams to 150 grams per tube.
Dried Shrimps
Use Chinese-style dried shrimp instead of Japanese-style/sakura ebi. You can substitute dried shrimp with fresh shrimp.
Double the amount if using fresh shrimp, and also add a teaspoon of salt when cooking the shrimp sprinkle.
How to Cook Steamed Egg Tofu with Dried Shrimp Sprinkle
1. Steam tofu
Cut egg tofu into 1-inch pieces, arrange them on a heat-proof plate, and steam over medium-high heat for 5 minutes. Set aside.
2. Add sauce
Stir soy sauce with five tablespoons of hot water and pour this over steamed egg tofu.
3. Prep dried shrimp
Soak dried shrimps in hot water for 5 minutes. Strain the shrimp and ground into small pieces with a chopper/food processor.
4. Cook sprinkle
Heat 3 tablespoons of oil over medium-high heat. Sauté garlic for 30 seconds. Add shrimp, sugar, and pepper, and cook for 2 minutes. Add scallions and red chilies and cook for another 30 seconds.
5. Sprinkle egg tofu
Top steamed egg tofu with cooked dried shrimp sprinkle. Serve immediately with steamed white rice.
Egg Tofu Substitutes
Although most Asian grocery stores carry egg tofu, it can be difficult to buy if you live far from one. You can substitute egg tofu with either silk tofu in block form or tube form.
Though not ideal, medium-firm, firm, or extra-firm tofu can also replace egg tofu in this recipe. I suggest using one block weighing about 400 to 450 grams to replace the egg tofu.

Steamed Egg Tofu with Dried Shrimp Sprinkle
Ingredients
- 3 tube (125 gram each/375 gram total) egg tofu
- 75 gram dried shrimps
- 3 tablespoon soy sauce
- 3 tablespoon oil
- 5 clove garlic, minced
- 1 red chili, thinly sliced
- 1 scallion, thinly sliced
- 1/2 teaspoon sugar
- 1/2 teaspoon white pepper
Instructions
