Strawberry and Milk Agar

A strawberry and milk agar-agar dessert that is super simple to make and totally pretty enough to celebrate Valentine's day or other romantic occasions.

I admit that my husband and I don’t celebrate St. Valentine’s day, at least not consciously. That is my way of saying that if we do end up having a dinner date, that is totally not a planned occasion. :D

The biggest temptation for me is seeing all the chocolates and strawberries that crop up during this celebration. Though I dream of whipping out fluffy strawberry shortcakes and maybe use a super dense and moist chocolate cake instead of the airy sponge cake, I hate to admit that sometimes I am simply too lazy to do all the works.

So, having impulsively bought a box of strawberries, I settled with making a super easy strawberry and milk agar. It still looks pretty enough for Valentine’s day for those who celebrate, though I wouldn’t mind eating this at anytime of the year. ♥

Ingredients

  • 5 to 6 strawberries
  • Transparent agar
  • 750 ml water
  • 100 gram sugar
  • 1 packet of agar-agar powder (I use Swallow Globe brand 7 gram packet plain agar-agar powder)
  • Milk agar
  • 750 ml fresh milk (any kind, cow, soy, almond, e.t.c.)
  • 100 gram sugar
  • 2 packet of agar-agar powder (I use Swallow Globe brand 7 gram packet plain agar-agar powder)
  • Tools
  • mold(s) of your choice, I use one 20 cm x 20 cm x 5 cm baking pan

Instructions

  • Strawberries
    1. Hulled, washed, and drained strawberries. Thinly sliced so each slice looks like a heart. Set aside. ♥
  • Transparent agar
    1. Combine water and 1 packet of agar-agar powder in a pot and bring to a boil.
    2. Add sugar and cook until sugar has completely dissolved.
    3. Pour into mold(s) of your choice, you should only fill about half of each mold.
    4. Wait 2 minutes, then scatter strawberry slices on top of the transparent agar. Chill in the fridge.
  • Milk agar
    1. While the transparent agar is in the fridge, proceed with making the milk agar.
    2. Combine milk and 2 packet of agar-agar powder in a pot and bring to a boil.
    3. Add sugar and cook until sugar has completely dissolved.
    4. Take out the transparent agar, it should be almost set, though still jiggly.
    5. Gently pour the milk agar on top of the transparent agar. Once it sets, chill in the fridge for 2 hours. Serve chilled.

    Dear Anita, I failed before making agar with milk so I wondered if milk is harder to set with agar? Is that why you use double portion for the milk agar in your recipe?

      Hi Justine, it is indeed an added insurance to double the agar-agar powder for the milk layer, though it should be okay too if you just want to use a single packet. I also wanted a texture contrast between the two layer, so I made the strawberry portion with a single packet of agar-agar and the milk layer with a double packets.
