Easy and delicious Chinese sweet dessert soup in 15 minutes. With just a handful of ingredients, you can prepare this healthy dessert in no time at all. If you don’t have sweet potatoes, you can also use kabocha, pumpkin, or even purple yam. Of course, cooking time may need to be adjusted, but the rough guide is to cook until easily pierced with a sharp knife.

Ingredients

  • 1 medium sweet potato, about 300 - 400 gram, peeled, cut into wedges
  • 2 pandan leaves, knotted
  • 2 inch ginger, bruised
  • 1/4 cup sugar
  • 2 cup water

Instructions

  1. Place all ingredients in a sauce pot and bring to a boil.
  2. Lower the heat to a simmer, cover, and cook for another 10-15 minutes, or until sweet potatoes are easily pierced with a sharp knife.
  3. Turn off heat, remove pandan leaves and ginger. Transfer to serving bowls, serve hot.
