Ingredients

  • 450 gram tempeh, cut into 1cm x 1cm x 2cm blocks
  • 2 bay leaves (Indonesian: daun salam)
  • 2 teaspoon palm sugar (Indonesian: gula Jawa)
  • 2 teaspoon salt
  • 600 ml water
  • Grind the following into spice paste
  • 100 gram galangal (Indonesian: lengkuas)
  • 8 shallots (Indonesian: bawang merah)
  • 5 cloves garlic (Indonesian: bawang putih)
  • 3 candlenuts (Indonesian: kemiri)
  • 2 lemongrass (Indonesian: sereh)
  • 1 fresh turmeric (Indonesian: kunyit), peeled
  • 1 1/2 teaspoon ground coriander (Indonesian: bubuk ketumbar)

Instructions

  1. Place all ingredients in a pot and bring to a boil. Cook uncovered until all liquid has been absorbed by the tempeh. Turn off heat and set aside.
  2. Heat enough oil in a pot for deep frying. Fry the tempeh until golden brown. Serve immediately.

    after i cooked the tempeh in water, I need to pat them dry before frying right?

      I usually put them in a strainer until they are dry to touch before frying, but pat dry with a paper towel should work too.

    Have you tried air frying the tempeh instead of deep frying? If so, what temp and time would you recommend?

      Hi Shuet-Li, I don't own an air-fryer so have never tried this with one. From what I can gather, most use 400 F for 10-15 minutes when cutting tempeh to 1 inch cubes. Since our tempeh is already cooked at step 1 and only need a quick frying, maybe try 400 F for 5 minutes to make the surface crispy?

    I am looking forward to this recipe!!! Is the spice paste also boiled?... or do I add the spice paste when frying the tempeh? :)
