Winged beans are a popular vegetable in tropical countries. I often prepare a stir-fry dish with winged beans or add them raw to my salad.

Winged Beans

Winged beans are tropical vegetables. They get their name from the four ruffled-edged wings running lengthwise down the pods. Each pod is about 8-10 inches long and is rich in nutrients.

The pods can be eaten raw or cooked. I often enjoy winged beans in a stir-fry dish, just like in this recipe.

You can also add raw winged beans to a salad. A thorough washing and a light blanching in boiling water will ensure that the beans are germ-free and safe for eating.

Ingredients for Winged Beans Stir-Fry

We will need:

  • winged beans
  • garlic
  • ginger
  • oyster sauce
  • salt
  • pepper
  • Shaoxing wine
  • sesame oil

If you need a simplified version, omit Shaoxing wine and sesame oil. The flavor is less complex without these two ingredients, though just as delicious.

TIPS: You can use the same ingredients to prepare green beans stir-fry.

How to Cook Winged Beans Stir-Fry

1. Prep winged beans

Chop and discard both ends of each winged bean, then cut into 7-8 sections.

2. Sauté aromatics

Heat a frying pan over medium-high heat. Once the pan is hot, add oil and sauté garlic and ginger for about 30 seconds or until fragrant.

3. Add beans and seasonings

Add winged beans, oyster sauce, salt, and pepper. Sauté for 1 minute.

4. Cook the beans

Add water and mix well. Cover the pan with a lid, and cook for a couple of minutes or until the beans are tender but still retain their crunchiness.

5. Add wine and sesame oil

Add Shaoxing wine and stir for 30 seconds. Turn off the heat, then drizzle with sesame oil.

6. Serve

Transfer the dish to a serving plate and serve it immediately with steamed white rice.
